CHEAT MEAL : Sweet potato nachos, pulled chipotle chicken, salsa and guacamole.. perfection!

I love rest days especially when it incorporates a cheat day meal. I try and eat as varied as possible but sometimes my food isn’t just as sexy as I would like it to be! SO Sunday called for a homemade Mexican dish:

Sweet Potato Nachos, Pulled Chipotle Chicken, Salsa and guacamole! Absolute Nommmmmm

Sweet Potato Nachos

Ingredients:

  • 2 sweet potatoes (the thinner, rounder, and most symmetrical make the best chip)
  • 2 tablespoons of coconut oil
  • Salt and pepper

Method:

  1. Preheat oven to 200C
  2. Slice potatoes thinly
  3. Toss them with coconut oil, salt and pepper and lay on baking sheets in one layer
  4. Bake for 25 minutes, flipping halfway through until brown and crisp, but not burnt
  5. Remove from pan and set aside to cool

Who doesn’t like nachos ??

Pulled Chipotle Chicken ( recipe from pinchofyum)

Ingredients:

  • 3 individual chipotle peppers  + 1 teaspoon of chipotle paste
  • 4 cloves garlic
  • 1 tablespoon of coconut oil
  • 1 cup freshly squeezed orange juice (store bought is fine )
  • 1½ cups  chicken stock
  • ½ cup light beer (or replace with ½ cup stock)
  • ½ cup fresh coriander, chopped
  • 1 pound boneless skinless chicken breasts
  • 2 teaspoons yellow mustard

Method:

  1. Mince the chipotle peppers and garlic cloves. Heat the coconut oil in a large pot over medium heat. Add the garlic and chipotle; saute for 1-2 minutes, stirring constantly to prevent burning.
  2. Add the orange juice, chicken stock, chipotle paste, beer ( or extra stock), and cilantro and turn the heat to high to bring to a boil. Add the raw chicken breasts; cover and reduce heat to medium-low. Simmer for 15-20 minutes or until the chicken breasts are cooked through. Remove the chicken breasts from the pot and place on a cutting board for a few minutes to cool. Shred the chicken with two forks.
  3. Meanwhile, keep the sauce left in the pan over low heat. Whisk in the mustard and cook the sauce until it reduces by about half until you get a more concentrated sauce. Add the shredded chicken back to the pot with the sauce and toss to combine. Top with additional fresh cilantro

Salsa

Ingredients:

  • 1 tomato diced
  • ½ red onion chopped
  • ½ jalapeno
  • ½ garlic
  • ½ coriander chopped
  • Sprinkle of salt, pepper and sugar (or sweetener)

Method:

  1. Mix tomatoes , red onion, jalapeno, garlic, and coriander in a bowl with some salt and pepper and the sugar and set aside

Guacamole

  • 2-3 avocados
  • 3 tablespoons of greek yogurt ( fage 0%)
  • ½ tomato diced
  • ½ red onion chopped
  • Juice from ½ lime
  • ½ jalapeno
  • ½ garlic crushed
  • ½ coriander chopped
  • Salt and pepper

Method:

  1. Halve and scoop out the avocados into a bowl, discarding pit and peel
  2. Mash avocados with a little salt using a potato masher to desired smoothness
  3. Add greek yogurt and mix
  4. Add remaining tomato, onion, jalapeno, garlic, and coriander
  5. Squeeze the half lime, add some pepper and mix thoroughly

Final touches

  1. Layer the potato chips on a platter
  2. Add the pulled chicken and then salsa
  3. Add a dollop of Guacamole on top, hand out forks and enjoy!

This is without doubt my favorite ever cheat day meal.. I’m already counting down until I can have it again!
