Biscoff Truffles

Ingredients:

  • 1 pack (250g) of Lotus Biscoff Caramelised Biscuits
  • 250g-biscoff-coffee-biscuit

  • 200g of Philadelphia (lightest version)
  • 200g of baking white chocolate
  • 1 teaspoon of vanilla essence
  • 1 tablespoon of dessicated coconut

Method:

  1. Crush the cookies to fine crumbs  in a resealable plastic bag using a rolling bin .
  2. Place the crushed cookies in a medium bowl. Add cream cheese and vanilla essence; mix until well blended. Roll cookie mixture into small balls, about 1-inch in diameter
  3. Refrigerate for 1 hour
  4. After the  balls have set, melt your cooking chocolate in the microwave or on the stove. Dip the balls in the chocolate until fully covered
  5. Sprinkle the  dessicated coconut over them
  6. Refrigerate until firm
