Ingredients:
- 1 pack (250g) of Lotus Biscoff Caramelised Biscuits
- 200g of Philadelphia (lightest version)
- 200g of baking white chocolate
- 1 teaspoon of vanilla essence
- 1 tablespoon of dessicated coconut
Method:
- Crush the cookies to fine crumbs in a resealable plastic bag using a rolling bin .
- Place the crushed cookies in a medium bowl. Add cream cheese and vanilla essence; mix until well blended. Roll cookie mixture into small balls, about 1-inch in diameter
- Refrigerate for 1 hour
- After the balls have set, melt your cooking chocolate in the microwave or on the stove. Dip the balls in the chocolate until fully covered
- Sprinkle the dessicated coconut over them
- Refrigerate until firm
