Healthy Recipes: Diet Cola Chicken

Ingredients: Serves 2

  • 2 chicken fillets
  • 1/2  red onion chopped
  • 1 red pepper chopped
  • 100ml chicken stock
  • 100ml diet pepsi/diet coke
  • Salt and pepper
  • 1/2 tsp paprika
  • 1/2 tsp mixed herbs
  • 4 tbsp passata
  • 1 tbsp worcestershire sauce
  • 1 tbsp dark soy sauce
  • Low calorie cooking spray
  • 1 tbsp corn flour
  • 100g sugar snap peas
  • 2 sweet potatos peeled and chopped in quarters
  • 1 tbsp lightest cream cheese


  1. Add the chicken, peppers and onion and stir-fry for 4-5 minutes, or until lightly browned.
  2. Add the diet cola, stock, passata, garlic, Worcestershire sauce, soy sauce, dried mixed herbs, cornflour, paprika and stir well.
  3. Bring to the boil, cover, reduce the heat to medium-low and simmer for 12-15 minutes. Add the sugar snap peas, stir and increase the heat to medium-high.
  4. In the meantime cook the sweet potato until soft. Drain and mash in cream chesse .

Serve hot, easy peasy!
