Salmon with spiced lentils and leeks

I love Meat-Free Monday and tonight I’m sharing my Salmon with Spiced Lentils and Leeks. Don’t get me wrong I LOVE meat but after an indulgent weekend, I’m quite keen to have something lighter.

  • Dairy free
  • High protein
  • High in omega 3s
  • Low in salt
  • High in fibre
  • Low in sugar

Ingredients (Serves 2)

  • 1/4 butternut squash, diced
  • 1 leek, trimmed and sliced
  • 1 vegetable cube
  • 1 clove garlic, crushed
  • 1 tbsp curry powder
  • 250g red lentils
  • 2 X 100g salmon fillets
  • 1 lime
  • 2 tbsp light coconut milk
  • 1 tbsp parsley, chopped
  • Salt and pepper
  • Low calorie cooking spray

Method:

  1. Boil a kettle. Heat frying pan and grease with low-calorie cooking spray. Add butternut squash, garlic and cook until soft. Add leek and cover with water. Cook for further 5-10 minutes. During this time add the stock cube and curry powder. Add lentils and 200ml of boiling water. Season and simmer while you cook the fish.
  2. Heat a separate frying pan and grease with low-calorie cooking spray. Add the salmon, skin side down and cook until golden. Flip over and fry until cooked through. Squeeze some lime juice and coconut milk into the pan and leave to rest.
  3. Once the lentils have fully cooked, serve and garnish with parsley.
