Purple Poachies

Thank god vegetarians eat eggs or this week would be a struggle! It’s two days in and I’m craving some chicken thighs! The.struggle.

Poached eggs look great and all when they’re accompanied with some crushed avocado and a sprinkle of chili herbs. This morning, I wanted something a little different though, something purple! I must admit I did not come up with this all by myself. I actually spotted the method on a French cooking program. Have you guessed yet? Yes, I cooked with red wine. Swap water for red wine and cook as normal. Easy peasy.

To say the smell was interesting at 8am in the morning would be an understatement. However, if you can get over that, the red wine gives a really nice flavour and obviously the colour is very pretty (Which all Instagrammers are gonna love).
