It is the 7th of January and this morning I hit 70km, 90km to go!Whoo!!
My sister is a great cook and loves to travel. Having had the opportunity to travel all over the world she has tasted some amazing dishes ( I’m so envious). Over the last few months I have been teased about this Indian Vegetarian Recipe that she knew I would love. Every time she made it I knew about it ! Last night I finally got to have it and I was going for seconds. It is SO healthy, SO yummy and SO unbelievably easy to make. If I was a vegetarian I would eat this every day and that actually isn’t an exaggeration!
Sweet Potato, Spinach and Red Lentil Dahl
Ingredients
- 100g red lentils
- 450ml veg stock
- 1 onion,
- 2 tomatoes
- 1 tsp Cumin
- ½ tsp turmeric
- 1 tsp garam masala
- 1 red or 1/2 a green chilli
- 1 large sweet potato
- 2 handfuls young leaf spinach
Serve with warm naan bread
Method:
- Put all the ingredients except the sweet potato, spinach and naans in a pan, bring to a simmer and cook for 10 minutes.
- Add the sweet potato and cook until tender, another 10-12 minutes. Stir in the spinach and cook for a minute until wilted.
- Serve with naan
