It’s been far too long since I shared a recipe with you guys. I’m so sorry. I could list off a number of excuses but I’m not going to!
I’m so jealous that I’m not doing the London Marathon today but I have managed to get a place in next year’s which is super exciting. I’m going to be training and following a plan from one of Britain’s top marathon runners with the aim of achieving 3hr 30mins. Thank the lord it’s another year away, I’ve a lot to get working on.
For my Irish followers tomorrow (Monday 25th April) I will feature in Taste Ireland magazine. It covers an interview with me all about my blogging, eating and fitness habits. There is of course a cheeky recipe in there too. Please pick up a copy and let me know what you think.
For my english followers next weekend I will be at Be Fit Women’s Fitness Festival with Quest so please come a long to our booth and say hello if you are around. There will be lots of Quest bars, I promise.
I’ve made chocolate orange protein bars before, which are frigin delicious if you haven’t tried them yet. This time round I’ve made an adapted (largely adapted) truffle energy bites Yes I love my truffles, but you will love them too when you try them.
Ingredients (Makes 12 – or 10 if you are like me and eat the batter)
- 50g pitted dates
- 25g pistachios
- 25g oats (I used Quaker oats)
- 25g chopped mixed nuts
- 1 tbsp chocolate orange whey (I used Bulk Powders)
- 2 tbsp cocoa powder
- 2 tbsp orange juice
- 1 tbsp nut butter (I used Bulk Powders Triple Nut Butter)
- Add all ingredients to a blender or food processor. Pulse for 10 seconds.
- Form into 10 balls. If you find it’s too wet add more cocoa powder and if too dry add more orange juice.
- Place in the fridge to set for an hour.

- Calories: 65
- Fat 4g
- Carbs 7g
- Protein 3g
