I know a lot of you are trying to be a little healthier this January which is great and I totally advocate that. You may or may not be sick of celebrations (I AM!) but I have a dessert that will curb all the sugar cravings and leave you feeling a little lighter shall we say.
Apple and Blackberry Crumble ( Gluten, Dairy, and refined sugar-free)
Ingredients (Serves 4)
- 2 eating apples, peeled, cored and chopped into chunks
- 200g frozen blackberries or mixed
- 2 tbsp orange juice
- 1 tbsp Sukrin Gold
- 1 tsp cinnamon
Topping
- 2 tbsp plain soya yogurt ( I used Alpro)
- 1 tbsp Sukrin Gold
- 1 tsp cinnamon
- 1 tsp nutmeg
- 50g coconut flour ( I used Sukrin)
Method:
- Preheat oven to 180C
- Add the apples and frozen fruit to a large bowl. Add sweetener, cinnamon and orange juice. Coat well.
- Divide mixture into 4 individual ramekins and cook for 10-12 minutes
- Meanwhile, add all the topping ingredients to a bowl. Rub together the mixture with your fingertips until it resembles breadcrumbs. If you find that it’s too creamy keep adding coconut flour until you get the right consistency.
- Remove fruit from the oven and sprinkle a quarter of the mixture over each ramekin and cook for a further 10-12 minutes until lightly golden.
- Serve with a dollop of dairy-free yogurt or ice cream.
