I love Haribo, like really love Haribo and when I’m training they are like my little treat. However, that kind of energy isn’t the type of energy I should be consuming on a regular basis. Instead I like to make my own energy based snacks to keep in the fridge or my handbag when I need them. I’m always trying to make new varieties and this is my most recent.
Oaty Apple, Chia and Date Bites
Ingredients (Makes 15)
- 150g rapeseed oil
- 5 tbsp date syrup (I used Beloved)
- 225g oats
- 3 tbsp chia seeds
- 200g applesauce
- 100g dates, chopped
- 2 tbsp roasted almonds
- 50g dark chocolate
Method
- Preheat oven to 180C.
- Melt the oil and the syrup together in a pan over low heat. Stir in the oats, chia seeds, apple sauce and dates. Spread the mixture onto a lined baking tray.
- Bake for 15-20 minutes until knife comes out clean. Allow to cool and cut into squares.
- Melt the chocolate and drizzle over bars. Decorate with roasted almonds
These will keep in the fridge for at least a week. I really like them served with Salted Caramel Oppo ice cream
